like they completely climb over the fence and are like 5 rows deep into the seats, they're basically one with the fans... If they catch the ball there would it be an out still? I assume so but I might never know, maybe there's a limit to this sort of thing...

It is not an out if they are physically on the other side of the fence. That would be a home run.

You have to have a portion of your body in the field of play. If you leave the field altogether and go into the stands, it will not count as an out.

it's an out but like Prince said, you have to keep some portion of yourself in the field of play...at the time of the catch. A lot of guys go running into foul ground and snag a ball going into the seats, and then go toes-over-teakettle and fully wind up outside the field of play. This is still ruled an out.

You can scale the wall and lean over as long as at least one of your legs remains in the field of play. I'm not sure what would happen if you literally stood on top of the wall. As long as a portion of your body hung over into the field, like your heel or toes, I suppose it would be an out.
