0-6 are sequential in terms of storytelling, so if you have any interest in the 'main' series start with either 0 (prequel) or 1.

I'd say get them all. Games are fun and have great mini games. People say to start with 0 but I started with Kiwami because I had already played the original years ago. It'd feel strange playing them out of order tbh so I'd say go with 0 and then to 6 unless you want to start in fresh and soon, there's Like a Dragon but its a RPG so it plays a whole lot different from the other games.
