What use do they have for it? It has no value to them. The only way they could spend it is if they have humans working for them that could act as middle men in exchanges.

Maybe it's like a bargaining chip. Since humans would never want to see that much gold be destroyed, dragons keep it like "Hey, I catch one of you trying to fuck with my lair, I'll melt it all down."

I think I was onto something in the 2nd part of the OP. It must have something to do with having power over humans/dwarves/whatever. They know people value it, so they hoard it to spite them or to have leverage with them or something.

There was a module for Dungeons & Dragons called Council of Wyrms. The players get to play dragons in it. In order to level up your character, you needed a certain amount of exp AND gold accumulated. Higher tiers also require a high age.

It seems that humans, dwarves, and yes, even elves value gold. Having power over them is one thing but I think it speaks more to the greed of man, who venture to their certain death for a chance at riches.

Dragons can disguise themselves as humans or full blown turn into humans. So they can spend the gold as they like. Usually to influence powers into rendering the wealth vulnerable to the dragon's plans.

Also, more wealth = more power. Some dragons eventually try to use the gold to transcend mortality so they can hoard even more for eternity...pretty scary shit.
