At least killing everybody(not just Black Shadow, that's the easy way out) is a challenge in a different way and throws some weirdness in. As for 'anyone can do that', I doubt that. No self-respecting F-Zero player snakes, btw. Not even worth mentioning. Nah, anyone can do it with enough practice. Just like how people figure out how to kill Black Shadow and Blood Falcon to make the race 10x easier. It all comes down to whether or not you have to patience for the trial and error. I just like outracing my opponents instead of knocking them off. Feels more thrilling that way. You'd be surprised at how some of the few remaining F-Zero players love snaking. I don't do it personally. Never bothered to really learn it anyways.
