I'm a fan of Manhattans (2 parts whiskey, 1 part sweet vermouth, 1 dash bitters, stirred with ice and strained) or Boulevardiers (a Negroni variant - equal parts whiskey, sweet vermouth and Campari, stirred with and strained over ice).
If you just so happen to have fancier liqueurs, one of my buddies came up with a Haymaker - 4:2:1 ratio of high proof bourbon, green chartreuse and maraschino liqueur, stirred and strained.
