I think I've heard the term "Soft science fiction" - where it's heavily rooted in fancy technology that doesn't exist, but the technology isn't realistic at all from our perspective.

It obviously borrows a lot from the sci-fi genre but it's definitely fantasy.

Sci-fi is all about dealing with what might be or could be, maybe with a stretch here and there (resulting in the various levels of hardness) but the Star Wars universe is fundamentally different from ours.

No, soft sci-fi is like Mass Effect. The story wouldn't work if it took a realistic amount of time to travel to the various systems, so they allow for FTL transportation and handwave it as ancient technology they don't understand anymore than the audience does.

While in Star Wars, the unrealistic elements are the basis for the story and worldbuilding.

And none of that is the focus or ultimately matters outside of, maybe, the Death Star. FTL can be replaced by boats, droids by pesants, lasers by guns/bows. Star Wars is a fantasy story told with space ships. It is about knights and wizards and their relationships.
In sci-fi, science should be part of the focus. Whether it creates issues or solves them, there should be some discussion about what could be. In Star Wars, "science" is just a vehicle to let characters fight, it is handwaved. It could be replaced by magic for the same story.
