Play bloodborne next, I personally believe it's the best souls game in terms of gameplay, music, lore and environment.

Dark Souls 3 has better customization options though.

Yeah once you get the parry timing down black knights are really easy. Alternatively they're pretty easy to backstab if your roll timing is good

I never roll to backstab those guys. Just try to run circles around them in the direction opposite of their sword arm and wait until they do a thrusting attack. Boom, you are now standing at their backside in perfect position for a backstab.

In fact this is how I achieve backstabs on most enemies. Rolling is pretty unnecessary except for bosses.

Circle strafe backstabbing kinda just feels exploitative to me.

I think if you're backstabbing a dude whether or not it's a fair backstab becomes irrelevant.
