So, if the fish is in the middle, you'll have to tap the button to keep the bar relatively still. You have to keep the bar on the fish long enough to fill a progress bar to catch it. As long as the fish is outside of the bar, the meter goes down and the fish escapes if it empties. What makes it annoying is: A. At lower fishing skill, your bar is pretty small, leaving more room for error. B. The bar bounces when it hits the bottom, so if a fish suddenly moves there, you'll have to skillfully tap the button to reduce momentum and minimize the bounce. C. Certain fish are just a pain to catch even if you're experienced. The harder ones will just dart all over the place like a cat chasing a laser. The most agreed-upon way to catch them is to use a trap bobber, which reduces the catch meter drain, along with possibly a food item that increases your fishing skill (and bar size). Trap bobber + Dish o' the Sea is pretty much a requirement for catching a legendary fish. So, you'll definitely want a mod that simplifies fishing. Something that auto-hooks and something that massively increases the size of the bar. I wouldn't get an auto-catch one, since you can also fish up treasure, and you need to be in the minigame to encounter chests. You can also just skip fishing entirely and just use crab pots.
