Because greens were readily available. So you didn't have to like it, you just had to eat it. Fats and sweets taste good because they were rare back in the day.

It's so that we don't eat them, and instead gobble down stuff that slowly kills us so the veggies can rule the earth when we're gone.

I can agree for some baked meats but you get a flame going and any meat is delicious, even plain.

Mmm. Green beans par boiled then finished off in a skillet with bacon and onions.
Dandelion greens cooked in chicken broth with lemon and garlic.
Roasted broccoli with orange zest.

I'm not a fan of raw celery, kale or mustard greens though. Kale takes a lot of work to get tender and reduce the bitterness.

I mean if you think about it, it's generally in the interest of plants to be less tasty to predators unless that's how they spread their seed.

But no vegetables aren't nasty, you're probably just preparing them in a bad way. That's usually the culprit.

Brussels sprouts are literally cabbage

I was under the impression that if you say "cabbage", it's generally understood to refer to larger varieties that are not generally served whole. Kinda like how tomatoes are fruit but you're not gonna put them in a fruit salad.

Turns out, those varieties are generally ok while Brussels sprouts, an excluded variety, are nasty.

If that impression is wrong, I'll just say that BS are an exception.
