In the show Gotham he was in the military or some sort of secret agent before settling down. Ive zero clue as to his backstory in the comics.

On one hand I don't know who is asking for an Alfred prequel.
On the other hand Alfred is literally always a good character. Even in the terrible Batman stuff Alfred is still good. I don't know any Batman adaptation where people think "Alfred sucked" --- Kind Regards, Darmik ... Copied to Clipboard!
