Also, if you have great timing with a mushroom, you can also sometimes dodge them that way. I did it a couple times in Mario Kart Wii, and I think it's possible in earlier games too. But the timing is really tough to get right. Either way, they did eventually add a 100% counter to it with the Super Horn.
