I don't regularly play MtG but I did a draft of it last night and I MIGHT have survived my first match if these mechanics had worked like I expected

A) If I use Pounce, does my monster still tap afterwards like a regular fight?
B) If my 8/8 monster with Trample and Lifelink fights a 3/3, how much do I heal?

(I probably should have Pounced at the enemy 8/6 instead anyway but I wanted to get out of lethal without compromising what little board I had)

A) No. Fight effects aren't combat, you don't tap to fight and things that relate to combat or combat damage don't apply.
B) 8 still, it doesn't matter how the damage is distributed.

Edit: And if this was with Pounce, Trample doesn't apply anyway.

In B, are you still talking about Pounce, or regular combat? Trample wouldn't trigger from Pounce, so your opponent would take no damage and you'd regain 3 life.

The last part is wrong, you still do 8 damage so you gain that much life.

Sceptile is correct on both counts. Lifelink doesn't trigger just from damage to enemy player, it works off of creatures as well. No matter how much is left over, if your 8/8 lifelink hits something, you're healing 8, unless some of that damage is somehow prevented by another game effect.

I don't know what Pounce exactly states, but if it's Creature FIGHTS Creature, then no it doesn't tap. It can tap the creature for the cost, but that's not part of keyword fights. Trample won't trigger on Fights since Fights is contained combat, the other player isn't involved. Unless there's other mechanics. Like Stuffy Doll, which if it takes damage, it deals damage to player.

Lifelink triggers on dealing any kind of damage, even massive overkill. An 8 smashing a 1 lifelinks 8.

Were you just playing casually with friends or was this a match at a store or something? If it's the latter, you can call a judge if you think the other guy is screwing with you.

A) No, Pounce reads "Target creature you control fights target creature you don't control. (Each deals damage equal to its power to the other.)" If the text of the card (including reminder text) doesn't tell you to tap creatures, don't tap creatures. All you do is exactly what it says on the card (both creatures damage each other).

B) You heal the amount of damage you deal. (You can deal overkill damage). So...probably 8 buuuut teeeeeeechnically there are some spells and abilities that prevent damage. There's also some enchantments that double damage (which would cause you to heal 16).
