I don't think that's true, but I could be wrong

As far as I know, if you want a horse from a stable, in case you left it out somewhere, you need two horses registered. That way if you leave horse1 out, just take horse2 out and horse1 will be automatically back in the stable.

Nope. You can "take" out a horse that's somewhere else in the world, whether it's right next to the stable or on the other side of the map.
