Because it's a bit harder to negotiate and read people on a flat screen as opposed to in person. Also it's important to build rapport which could take a few days or several trips whereas just having an hour long meeting here and there won't cut it. I think people just prefer basic human interaction still :\

But...it's not just meetings. For example lets say your an IT specialist for a specific program or system. Your company might fly you around to update other areas of their business and make sure they're up to date.

If you're a manager you could be flying around to other areas to make sure everything is up to your standard.

Even in the case of meetings you could have contracts to overlook and sign. If you're presenting or selling something you're likely gonna have to show them a presentation and maybe even the product itself.

On top of these you have jobs that are all about travelling around to do your work.

Stuff that be done over video calls would likely be a small minority. If something could be done over video chat it probably could be done over the telephone before and wouldn't have needed a flight.
