I definitely plan to do all of the above for sure. I'm wondering about landmarks too. Tokyo Tower is one. What other big landmarks?

kk so I went to tokyo and kyoto for a total of like 4 and 2 days respectively

in tokyo you should go to golden gai, something I did not do but wish I did. I am going to post a list of stuff that we researched and chose from and I'll bold what I went and did

meiji shrine, yoyogi park, shinjuku national garden, tokyo skytree, museum, ueno park, sumo, fish market, POKEMON CENTER, Chidorigafuchi , Yunnessun Hot Spring Resort. Shinjuku Kappou Nakajima, Mt. Nokogiri, Cup-Noodle Museum, Asakusa Unatets, Ramen, Shibuya Crossing, Ghibli Museum, Robot Restaurant, Asakusa Sensoji, Hamarikyu, Roppongi, Akihabara, Sensoji, Tokyo Metropolitan Government building, The Lockup

we also just hit up random shit there that's not listed here like the cat cafe and random stores we stopped in at lol. check out the shinjuku garden though for sure, I really liked that and I took some nice photos there that I use as my wallpapers. the robot restaurant was a tourist trap and sensory overload but still kinda fun. just expensive. go into random arcades

in kyoto

international manga museum, Kinkaku-ji, Ginkaku-ji, ryoan-ji, Gion (Geisha), buddhist temples, bamboo forest, Iwatayama Monkey Park, Fushimi-Inari Shrine, Himeji Castle

and again random stuff cuz my friend lived in kyoto at the time so he took us around. from kyoto we took day trips to nara and osaka. if you go to kobe go to the animal kingdom

go to an onsen for sure. and just whatever catches your eye, there's probably a good reason for it. hopefully this helps a little bit in terms of stuff to do if you were looking for it. I went 2 years ago now, I would love to go back.
