Their actual skill is studying and memorization. And the trivia questions they select for Jeopardy are chosen by people looking for trivia questions for games. So the answer is because if they had video game trivia beyond the very surface level nobody would know the answers because none of the contestants studied those questions. Now, if elaborate video game trivia became standard trivia questions that showed up in trivia games and Jeopardy often, then there would be trivia research materials on that subject available to study, and the Jeopardy contestants would then study those questions and know the answers, even if they don't play video games. --- Mwahahahaha. ...
