I would say not as long as you get to choose, there being an easy mode option didn't make me feel less accomplished from beating Catherine for example on the hardest difficulty from the start/as the first playthrough, and the easier options will let people who just aren't good at those kinds of games actually be able to play/beat some games and enjoy them (and of course they can play again on the harder difficulty if they so choose after).
