This is not a universally true statement. It's also not really a scale from 1-100 either. Some kinds of processing can reduce some nutrients while increasing others. The overall effect of blending your fruits and veggies is not very big anyway as long as that's all you're doing. But it can also depend on what kind of fruits you're blending.

Pineapples have Bromelain, for example, which is an enzyme that can destroy the nutrients in other foods.
