I've read books 1-3 of Sanderson's Stormlight, and while Oathbringer turned me off, I've always heard good things of Mistborn. I guess I should give an example. A recent one for me is Dungeon Meshi. It's a manga, but currently has an anime running. The whole story feels really well put together, and the ending doesn't disappoint at all. I often hear the opinion that manga have bad endings, usually because of the schedule, but this didn't suffer from that at all.
