I can't comment on the artistic value of the Remake since I won't be playing it anytime soon, but FF7 did imo have some unique artistic value precisely due to its technical limitations. Not in a cherry-picked shot of flat green overworld, mind you, but it was there. In particular I liked how most of the interiors were small little boxes floating in a dark void - kind of gave things a diorama-like feel and occasionally enhanced a sense of loneliness and isolation. Even something as simple as riding an elevator up to the Gold Saucer talking to an NPC about Chocobo Racing was somehow made more memorable because of this. Other games did this before due to tech limits, but FF7 was a more in-depth and cinematic experience, so sometimes it felt like a deliberate artistic choice even if it wasn't (it was especially unique to FF7 because 8 and 9 completely did away with this iirc).
