The "legal definition" of cheese is at least 50% pressed cheese curds. American Cheese "cheese product" is still cheese it's just diluted to be like 45% cheese and 55% water. There are American cheeses with a bigger cheese ratio that are legally cheese.

I know? I wasn't commenting that all American cheese is a cheese product, just that what they were talking about was. At least in some versions of the product.
