I think they originally had live action "dwarves" that were normal size people. People were mad that they didn't give jobs to actual little people actors. Now this. I think dwarf actors like Dinklage were justified in their outrage because it's one of the few roles that already naturally existed for them. Making them normal size was not only stupid, I think it takes away from the fact that their size helped Snow White feel less threatened. A woman living in a strange house with 7 full-sized men just doesn't have the same vibe.
