The only reason you got XIV at all instead of XI just going on forever is because they completely screwed the pooch on XI and had to redo everything all over again just to get people to play.

Not quite. It's more like the same couple of devs in charge of XI were asked to do another MMO, just for the sake of doing another MMO. They did it, ad what they made was one of the worst messes in online gaming history. XI had its flaws in spades, but it was playable and had some good to it; XIV 1.0 did not. 1.0 was the one that screwed the pooch and required a nuclear option, a la., Bahamut, to break away from at least half of 1.0's problems at the time.

FFXIV is successful and popular, so there's no reason to reboot.

XIV has been successful and popular. People are less invested in the patches' main story for this expansion, the hardcore raid scene is kind of hurting, and even longtime achievement hunters like myself are either walking away entirely to play other things or doubling down on their playtime and endless grinding like so many victims of sunk cost fallacy before them. If the next expansion fails to entice people to keep playing, its popularity will fall.

It's the same reason why we never really got WoW2.

Again, no. WoW has been going downhill, with different still-going players saying different later expansions were better for X, Y, Z reasons (most of which sound dull at best). The reason we never got a WoW2 is because Acti-Blizz wrote themselves into a rotting storm drain in the middle of an island populated only with Resident Evil 4 villagers, and all prospects of reboots or future games in the Warcraft world are long since gone; and then made even worse by Acti-Blizz having such bad financial decisions that they require market trickery to both look good and continue paying Bobby more in a month than everyone else at Acti-Blizz makes in a handful of years.
