Everything changed in D&D 5. Evil/Good pretty much only apply now to things that are supernaturally so like demons or celestials. You can be evil aligned but that doesn't make you "evil" and no creatures living or dead are forced into any given alignment unless they're one of the previously mentioned supernaturally evil or good races.

Stats in the MM books are considered examples and not typical of an entire species.
