I think the problem is how these archetypal monsters, witches and demons of lore have been coopted throughout the ages by people looking to diminish ethnicities and race.

When you have people continually comparing Jews to goblins and witches throughout the centuries the over time the monster's features and negative Jewish stereotypes start to look increasingly similar. And when you portray those monsters, even with the best of intentions, you are going to run awfully close to the line of making negative Jewish caricature.

This isn't to say that people should stop using goblins, hags, orcs, etc. but it'd probably be in everyone's interest to step back and look at the greater context before accusing something being problematic or of someone trying to "be offended by everything".
