Do not keep it a secret. It generates needless stress for everybody. The actual proposal moment can still be a surprise, but the idea that you are going to do it should not be. Go ring shopping together with a rough budget in mind. For all you know, they prefer a single gem to the encrusted pav look. Or a certain shape? Maybe they value clarity over carets? Maybe a larger gem looks weird on a small hand? Maybe they have feelings about how money should be spent? Or maybe you luck out and they want to use their grandmother's ring instead.
...and definitely don't forget to insure it immediately (look into "valuable property insurance").
Depends on the woman. My wife didn't want to be involved in the process at all because she thought it'd be stressful making that type of decision or putting in the effort to learn what she wanted in the first place.

I took a woman friend with me to help educate me on some things and point out stuff. She was phenomenal help.
