The first one is pretty good, fun combat, nice atmosphere, but it's pretty short. Only a couple hours long. It's basically a tech demo for the Gamecube.

Dark Moon is longer, split up across multiple locations, each location has a number of standalone missions. There's not really any free roaming exploration of the mansions, you can only go to rooms that the mission allows you to go to. But this game is where the Luigi's Mansion aesthetic and character and art design really came into it's own.

3 is good, a lot of variation in the locations and level design. Lots of charm and Nintendo polish. Pretty long too, when I played yesterday my completed file from a few years ago was over 12 hours. My biggest gripe with this game is how simplistic the combat is. After a while all of the combat encounters feel the same.

Overall the series is worth checking out. I'd say Dark Moon is the weakest of the bunch, but it's still worth playing if you can find it. I never played the 3DS remake of Luigi's Mansion though, so I can't really speak for that version. Hopefully if they make LM4, they make the combat more varied.
