I've never had the thickness issue with it that you describe. Soy (or pea) really is the only suitable alternative to dairy. Oat and almond milk are essentially expensive sugar water (almond being water intensive and diluted sugar water) devoid of any real nutrition. One might as well be drinking soda. And if someone is only using it as a splash in coffee or tea, just go for non dairy creamer. That is literally if you buy the added sugar ones.
