My absolute favorite is Jishou Akuyaku Reijou na Konyakusha no Kansatsu Kiroku- the main thing that sets this one apart is that the POV isn't the villainess but instead her genius but terminally bored first prince fiance. The villainess is a lovable idiot who tries to play to her role for the sake of everyone's ultimate happiness, but the prince weaponizes her knowledge to lead things in a happier direction.

Roxana, a manhwa, is a good one where the villainess is trying to sabotage her absolutely evil family by pretending to torture the main character's imprisoned brother. Gets semi-horny but never goes all the way, iirc.

There's not much of it out now but the Dong Bai one is absolutely hilarious. If you don't know much Three Kingdoms, Dong Bai was Dong Zhuo's granddaughter, and being related to Dong Zhuo is not a really great thing

Doctor Elise is another manhwa (honestly, most of the good villainess shit with interesting setups are Korean) about an evil queen that repents after being reincarnated in the modern era as a doctor, and then gets reincarnated back early into her first life. I think it's technically complete but there's an ongoing web novel or something.

If you want anime there's really only Hametsu Flag right now because the one from last season sucked (and those are the literal only two villainess isekai anime), but the princess+genius one this season should be good.
