The 80 ascension needs more gemstones than you get for the amount of times you need to kill the boss for the drop. But because you get gem shards from dailies and weekly bosses, you'll end up with a stockpile over time. Major events every patch also tend to give out a bunch. But trying to quickly ascend guys can be a pain (especially for Dendro shards).
