If you put yellow mustard in an ice cream maker (or otherwise freeze it while churning it), it ends up freezing to just the right consistency to then pass it through a food mill and end up with tiny pellets, which can then be sprinkled on whatever food you think needs a pop of cool mustard flavour. --- This is my signature.
