I'm tempted to say "none" - most of them are products of their era, and playing them 20-30 years later is mostly guaranteed to make you look down on them for not being "sophisticated" enough. So you'll just come away thinking poorly of all the games, as well as of the people who talk about how awesome they are.

If you absolutely feel compelled to play them anyway, I'd start with I, then skip ahead to IV and VI. As far as I'm concerned, those are probably the absolute best of the early games. I find III and V to have weak stories/characters for their time, and II is interesting but has mechanics that a lot of people absolutely hate.

VII's a weird case. Depending on which version of it you play, you might enjoy it. But most people who claim it's fantastic are doing so because of their memories of it at the time (and it's aged worse than nearly any other FF game), and for a lot of people it was basically "Baby's First RPG". If you play it now you may be hugely turned off by the shit graphics and awkward translations, or compare it poorly to tons of better RPGs. On the other hand, you might like it... or you might just want to play it because it's such a huge part of video game history that you just feel obligated to experience it at some point.

Avoid VIII like the plague, no matter what some people here are going to say. It's trash in almost every conceivable way and every aspect of design.

And IX's another weird one. Some people will praise it to the moon and say it's the best FF ever, but a lot of its appeal is rooted in the nostalgia it exploits in people who've played previous FF games. It was a return to a fantasy setting after VII and VIII went more sci-fi, it exploits nearly every cliche and trope of the series, and it's chock full of endless references to previous games. If you play and enjoy a lot of the earlier FF games first, you might appreciate IX much more. But if playing the earlier games 20-30 years past their prime leaves you a bit cold, you probably won't love IX either.
