A good example of this is borderlands. They have cool sniper rifles in the games, however I hate how there really isn't a stealth aspect to it. The second you fire at an enemy all the others some how know exactly where you are.

Makes you won't what's the point of even having those sniper rifles in the first place.

That's exactly what would happen in real life, though. It's kind of hard to disguise the incredibly loud boom a sniper rifle is going to produce, so after your first shot all of the enemy are going to be alerted. Then it's mostly just a question of figuring out what direction the shots are coming from, finding cover, and potentially flanking.

It's why snipers tend to either focus on high-priority targets and then scoot, or act as part of a larger operation where the enemy are occupied with other things so can't focus on finding the sniper.

Games where you enter perfect stealth and can pick off an entire army one man at a time without anyone knowing you're there are way more unrealistic.

As for games like Borderlands, the point of a sniper in games like that (or Destiny, or Halo, or whatever) is that you're still shooting from a greater distance with a weapon that does significantly more damage than most other guns. So you can fire off a few powerful shots and potentially take down a number of enemies before they rush you, at which point you're switching to your back up close-quarters gun, which encourages a degree of strategy.
