Ah yes I didn't find one in the Depths, I definitely didn't search every nook and cranny there. I didn't get to fight the giant rat either, I was too excited about going down to the infamous Blighttown to bother going back and scouring the area >_> Plus as said I avoided killing the non-hostile little rats, so I probs missed a hidden path or two around them (and def some items). I'll head back there at some point.

I think I've only got 5 bonfires- Firelink (well, not right now), Undead Burg, the one above the smith, and the two in Blighttown.

The eye from the keeper will let you know when you can use it, and that won't be for a little while, I'll say that much.

Ah it did mention an 'Anor Londo' so maybe it means there. So if you're playing online can people just come and snuff out your bonfires? Sounds annoying!
And I will try the Butcher Knife, thanks.
