In all likelihood, that is indeed what his taxes will probably say (unless he's doing it for free, as mentioned), but for colloquial conversation purposes I'd still be inclined to defer to how he identifies his career instead of insisting on my own identification. Whether side hustles need to be declared on tax forms or not, they're still just side hustles and people don't consider them to be their actual job. There are cases where you can point out that somebody's spending more time on and making more money from their side hustle than their "real job" and should maybe consider pivoting into focusing more on it, but it's still going to be a matter of people deciding for themselves how to identify their career.
