TopicMy new goto homemade soup.

So Yum.

So I stopped using my insta-pot to make soup and just make it in a small normal pot (Cause I can eat right out of it, after putting it on a plate).

Here are the steps/ingrediants.

First a bit of oil on the bottom of the pot. I add in 1 diced mushroom (still decent sized chunks though), a bit of onion (about 1/20th of an onion cut up), some diced bell peppers (I but a container of about 1 pound from safeway every week for $3, so no work, and whole bell peppers be like $2 now (green), red is the same amount).

I sautee them for a bit and add in the red pepper flakes at this stage. I also dice up brocolli crowns (to be about the size of a finger, not so small it breaks down into the soup, but small enough to easily fit one bite on a spoon without filling the whole spoon).

I let that all sautee for a bit,then add 1/2 of a organics beef broth to the mix. I then add garlic powder, oregano and basil to it (not a ton), along with just a splash of soy sauce.

I let that simmer and cook for a bit so the brocolli gets softer and the mushrooms etc flavor the soup.

I then add about 1/4th a jar of Prego Meat sauce. This actually adds little meat chunks into your soup. I switched to this from cutting up tri-tip steak and adding that, as it's more flavorfull and soft, and the tomato sauce adds flavor as well.

I let that cook for a bit as well, simmering it (for now about 30 mins total), then I add the final ingrediant, 6 won tons (I get the pork and chicken wontons from safeway (select) as they are delicious). You could also add noodles/pasta if you want, but the wontons are enough for me).

I let that cook for the recommended time for the wontons (about 6 minutes), then add a bit of white corn at the end (after turning off the heat), to finish it off. Let rest just a few minutes and nom nom nom.

It is so delicious, very flavorful, not a ton of calories but very filling (due to all the water), oh I also add about 1 cup of water, which I use to clear out the prego jar if it's the last of it (otherwise straight from a cup).

End result is delicious, tons of flavor, done in about 40 mins, very easy to clean up while doing it, and especially good if it's cold and rainy out (which it is all the time here).

Anyway, just thought I would share since it's so yummy and I remember there being some soup lovers on here:)

You can also dip bread in it if you want of course (I'm diabetic so I don't) or do crackers etc. None for me though!!
