Its simple geometry when you think about it. The 360mm radiator has 50% more surface area than the 240mm. That provides better cooling. Because the 5000-series ryzen chips run hotter already, it's a good idea to havr a bigger radiator with a triple fan setup to cool it. I currently have a 240mm radiator cooling my Ryzen 7 5700x and it runs around 80C under load which isnt great.
