Because legally, in China, Taiwan is part of the greater country. The equivalent scenario would be if Puerto Ricans considered themselves separate, and the rest of the UN was split as to whether or not it was a separate country or not but the USA would boycott the games if the Puerto Rico team wasn't called "American Puerto Rico".

Chinese history from the last 100 years really is fascinating, and a textbook example of why Communism is a blight on humanity.
