I feel like a lot of what I liked from early GoT was that characters didn't feel like they filled a role. Most everyone had issues (Starks felt like the only 'good' characters. Like, even Jorah was a perv), and everyone had their own agenda, and the characters who were deemed to be 'the' hero... died.

Into season 6 and a lot of final roles were chosen and expectations were set and intrigue largely disappeared.

Stannis was always so good because he wasn't a Stark but he was opposed to the Lannisters and that made him such an interesting viewpoint. Davos and his daughter brought him some humanity that wouldn't have been there otherwise and made him compelling.
