This is a little something I came up with one time when I accidently bought corn tortillas instead of flour ones at the store. It's a nice quick snack that gives you a flavorful fried top section, a moist and toothsome steamed center, and a stable and balanced baked base.
Ingredients:
three corn tortillas
two tsp of cooking oil
a pinch (or two) of salt
other seasonings to taste
Steps:
Place a pan or skillet large enough to hold the tortillas on the stove over low heat
Add your oil to the pan or skillet and move the pan or skillet such the oil pools on one side
Layer all three tortillas together and place them in the pan or skillet over the oil pool
Turn up the heat to medium and wait 2-3 minutes until you see the top tortilla start to peel
Use a fork or spatula to check the bottom tortilla and flip the stack when it is light brown.
Move the tortilla stack away from the location the oil pool was in if there is any left over still
At this point season the top of the stack with your salt and anything else you have
Wait another 2-3 minutes and check the bottom (previously the top) tortilla for a light brown bake
Turn off the heat and use a fork or spatula to remove the tortilla stack and place it on a plate
Wait 2-3 mins for the stack to cool, but not get cold. The bottom should be dry and oil free so you can eat it with your hands
