Offer to help her fill the bins, anything that gets her out sooner. She can figure out a place to be until the 1st, be it family/friends/extended-stay hotel, and short term storage for any stuff. Especially if she's telling you what to do living wise, and there is no effort being made towards food, nope. That sounds like a loooong 3 weeks ahead. You need to finally do what's convenient for you, not her.
