Because humans as a species are sort of designed to psychologically assume our own upbringing and world-view are inherently and objectively correct, so we can judge all world cultures and ideologies based on how they conflict with what we believe.

Ethnocentrism is an outgrowth of egocentrism, and it's pretty much hard-wired into our psychology. And the sort of people who will swear blind that they're not biased in that way are almost certainly some of the worst examples of it (which is where hypocrisy comes in as a concept).
