Sensitivity is determined by both your mouse DPI and the in-game sensitivity setting. What you want to be looking for is your "eDPI" which factors both of those in. So for example a person playing Apex on 4 sens and 1000 DPI will have the exact same sensitivity (eDPI) as a person with 2 sens and 2000 DPI.

There is no "right" setting since it comes down to preference and whether you aim with your wrist or arm. Generally the lower your sensitivity the more precise you will be when aiming, but the harder it will be to move quickly. This is why people play CS at really low eDPI but have to raise it for games like Apex.

Find the lowest eDPI you can play on without it impacting your movement. Pay attention to your crosshair when aiming and determine if you're leading the target (sens too high) or dragging behind it (too low). Technically a higher DPI and lower sens is better than vice versa but past a certain point there's no noticeable advantage to crazy high DPI settings. Most people seem to keep it around the polling rate of their mouse (~800 to 1600).
