Generally speaking, people asking "who cares?" in this sort of context are not literally asking which specific entities have an opinion on this, but rather asking why anyone feels this is worth caring about to the point of compromising somebody's livelihood. The question is not "does Taco Bell have a clause in their employment agreement about this," it's "*should* Taco Bell have such a clause?".

Generally speaking, "who cares?" is asked as a shitty rhetorical question because usually people clearly care and have good reason to do so. Companies have to worry about their reputation and the conduct of their employees can very negatively impact that reputation. And as you, he, and everybody else has seen in the past decades, companies are very frequently put on the hook for their employees' controversial behavior.
