Bacon just isn't really used as most traditional cuts of meat are. For starters, it's just about the least healthy piece of (Uh, edible) meat possible. Beyond that, it's really too salty and greasy to use in any quality capacity as the main dish. So it's mostly just a supplement to more palatable meats and foods. It's great in that role the same way frying something in oil then throwing salt on it makes it taste better, but there's a lot more to food than just fat and salt and nitrates.

I do love me some bacon though.
