Topic	Is there some trick I'm missing to get AirPods to work well with Apple products?

The issue with you is that you manually paired them to the windows laptop so the airpods likely pair to that the second you take them out of the case and won't pair to your phone or ipad as long as they're paired to the windows laptop.
