Make up a cheesy bechamel sauce instead of the cream of mushroom. My first thought is cheddar, but you might want something different with the shallots. That, or replace the green bean casserole with broccoli with cheese sauce (though broccoli and brussel sprouts might be a bit redundant). l do put parmesan in the cream of mushroom but I wouldn't call it cheesey.
