What's your menu for Thanksgiving this week?

Normally I do ~5 side dishes for a large family gathering where other people bring things, but this year will just be me and the bf zooming family. There will definitely be leftovers.

  • buttermilk brined cornish hens (with thyme, rosemary, orange, lemon, other stuff). Mini turkeys!
  • butternut squash and sweet potato gratin with thyme, cheddar, and gruyere
  • roasted brussel sprouts, shallots, and garlic tossed in apple cider vinaigrette with maple syrup and walnuts
  • roasted delicata squash with a maple syrup tahini dressing, pomegranate seeds, pepitas, and parsley
  • rainbow carrots with balsamic glaze, parsley, pine nuts, and crumbled goat cheese
  • brown butter sage mashed potatoes
  • green bean casserole from scratch (fry my shallots, make cream of mushroom myself)
  • wild rice + cornbread stuffing + apples + walnuts + dried cranberries + things stuffing
  • jalapeo cornbread muffins
  • mini cherry pies

potentially popular opinion: sweet potatoes have no place au gratin (or scalloped). Not only do they not go well with cheese, they don't have the structural integrity for either dish.

Well this is cubed actually! Not scalloped.

I do think potatoes are better in general (and scalloped) but I want mashed potatoes so can't do it both ways lol. I need something cheesey >.>

I've done it before and it works /shrug

Ingredients
  • 4 large Idaho potatoes peeled and quartered
  • 2-4 cloves garlic peeled (I used 4)
  • 8 tablespoons unsalted butter browned
  • 8 leaves fresh sage chopped
  • 3/4 cup heavy cream


  1. In a large pot of cold water, bring the potatoes and garlic to a boil. Salt the water and cook until the potatoes are tender, about 20 to 30 minutes.
  2. Drain the potatoes, return the potatoes to the pot and mash, adding the cream and 2 teaspoons salt.
  3. In a skillet or small sauce pot melt the butter and chopped sage over medium heat until just browned. The butter will melt, foam and froth, then begin to brown along the bottom. Whisk browned bits off of the bottom of the pan.
  4. Pour the browned sage butter into the warm mashed potatoes. Taste and season with salt and pepper if desired.

Fair. Those do sound quite good. You could make the green bean casserole cheesy instead. Make up a cheesy bechamel sauce instead of the cream of mushroom. My first thought is cheddar, but you might want something different with the shallots. That, or replace the green bean casserole with broccoli with cheese sauce (though broccoli and brussel sprouts might be a bit redundant).

I neither make nor eat them. Ate a lot of them once when I was a kid and they made me throw up, so I've hated celery since. I'm not sure what all goes into them, but cream cheese is the major part.

l do put parmesan in the cream of mushroom but I wouldn't call it cheesey. Recipe for that:

Pimento cheese has cream cheese, along with other stuff. I like to add extra jalapeo and cayenne to make it spicier (note: not saying this is spicy, but more flavorful, my spicy meter is broken so I do have to be careful for my SO).

But regardless, you do you. I used to find celery kinda just blank as a way to deliver things on it to my mouth. But recently moving to California and getting local organic celery, California obvs has a big local agri industry, it was like I never tasted celery before in my life even though I ate a bunch if it. Actually had some flavor.

I'm lucky to have that to buy nearby but wow it really opened up my eyes.

My roommate bought a turkey the last week of September and there was no room in the freezer and it couldn't last 2 months in the fridge, so I made Thanksgiving dinner back on October 3rd.

October 1st I made a brine with salt, vegetable stock, peppercorns, allspice berries, and candied ginger, then I soaked the turkey for 2 days. I filled the cavity with fresh sage and rosemary, apples, onion, and cinnamon sticks, then I coated the outside of the bird with ghee. I placed it in a rack which went into a roasting pan filled with potatoes, carrots, parsnips, and onion, stuck a thermometer probe into the breast, then put it into a 500F oven. After 30 minutes I dropped the temperature down to 350F, then when the probe registered 140, I pulled the turkey out, carefully flipped it over, and tossed it back into the oven at 500F until the probe registered 161.

End result: An incredibly juicy turkey that was golden brown all the way around, and a pile of roasted vegetables that had soaked up all that turkey juice making them tender and buttery.

My roommate also wanted some stuffing so I begrudgingly made a box of Stove Top (it's hard to get ingredients for stuffing in October, unless you want to make everything from scratch), and as I suspected the stuffing was promptly ignored because the turkey and veggies were so amazing.

My roommate also wanted mashed potatoes and gravy, but I said I was making roasted potatoes and that he wasn't going to need gravy.

I used to get pre-made refrigerated stuffing with turkey dinner "kits" the supermarkets would sell, but last year they stopped doing that for some reason and I can never find it for individual sale.
So I went to the Stove Top box, or store brand knock offs of it.
It came out pretty good for me... Hopefully it will this year, too.

Apparently its a family recipe, but you can Google a similar one. The ones that came up for me were close enough. Its turnip, eggs, crumbled breading on top when you bake it and some seasoning.
