TBH, that doesn't really help me. I learned four taste buds as a kid. I've certainly heard of umami, but I've never understood it. Reading definitions and examples doesn't really help, either. One says it's the body's reaction to MSG. So basically, it's the taste bud for Chinese take-out? Others say its the flavor of meats and broths, and yet many sources mention mushrooms and tomatoes as having umami. I don't see any underpinning connection between the foods that are usually used as examples, so I return to my previous statement, given the way the poll was structured:
