Bomberman Live... not sure if people play on XBL much anymore, but it's a solid game to play with friends still.
Puzzle Quest: Challenge of the Warlords if you've never done PQ before.
I found Band of Bugz to be worthwhile but ymmv.
SOTN if you've never done that before, or you like having a picture of Dracula on your screen at all times!
There's a Settlers of Catan game as well
probably lots of others I'm forgetting. also you can just DL demos for anything that grabs your interest.
